When I moved out of my parents' house, I had *very little* cooking experience. I had taught myself to flip an egg without a spatula, keeping the yolk intact, and that was enough for me. 

In time, I found a deep appreciation for working with food. I bounced between several local kitchens and cafes, became borderline-obsessed with organizing my work space and defining my process, determined to have an intimate relationship with consistency and creativity. And I was pretty good at it. Rewriting, simplifying, and beautifying the recipes at work was a labor of love and was rewarding in itself. I frequently thought, "I could enjoy doing an entire book of these.."
